
Method:

Preheat oven to 340 degrees F (170 C)

Blend ingredients together

Pour batter into five cupcake cases or five individual tins

Bake for about 25 minutes or until an inserted knife comes out clean

Serve with Greek yogurt and enjoy!

Lemon-Vanilla Muffins
Ingredients
(makes five muffins):

5 scoops of Aktiv 50 Plus

2 eggs
-
1 cup of oats
-
1 tbsp lemon peel

3/8 cup of milk

¼ cup coconut flour
-
½ cup cottage cheese
-
1 tsp baking powder

2 thin lemon slices to garnish
Prune Protein Cookies

Ingredients
(makes 12 cookies):

60g of walnuts or pecans
-
2 scoops of Aktiv 50 Plus

75g of prunes or dried figs
-
170 – 200ml of warm water
Method:

Preheat oven to 180 degrees Centigrade

Mix ingredients together in a blender

Hand form cookies and place on a non-stick baking tray

Bake for 15 minutes, or until cookies are golden brown

Allow to cool before enjoying with fresh summer fruits!
Chocolate Protein Pancakes

Ingredients
(makes 10 pancakes):
-
4 eggs
-
2 bananas
-
100g of oats
-
3 scoops of Aktiv 50 Plus
-
2 Tbsp of unsweetened cocoa powder
-
1 Tsp of ground cinnamon
-
Fresh strawberries to garnish
Method:
-
Preheat griddle and coat with non-stick cooking spray
-
Add bananas, oats and whole eggs to blender, and blend bananas are fully mashed and oats are ground

Add 3 scoops of Aktiv 50 Plus, cinnamon and cocoa powder, and blend again until smooth
-
Pour by ¼ cup full on to griddle, and cook until bubbles begin to form, then flip and cook through, about two minutes
-
Serve immediately with fresh strawberries
Chocolate Protein Waffles

Ingredients
(makes one waffle):

1 scoop of Aktiv 50 Plus
-
1 Tbsp coconut flour
-
1 Tsp baking powder
-
1 egg
-
2-3 Tbsp of water
-
1 Tsp of vegetable oil

Method:

Preheat waffle iron
-
Combine Aktiv 50 Plus, coconut flour, baking powder and egg
-
Use hand mixer or whisk to blend until the dry ingredients become wet.
-
Add water, one tablespoon at a time until the mixture becomes the consistency of a thick pancake batter.
-
Grease waffle iron with oil to prepare for batter.
-
Spoon batter onto hot iron.
Cook waffles until crisp per manufacturer’s instructions and serve immediately with a pat of butter or your choice of low carb syrup (not included in macros)
